Today’s recipe is another “healthy” one, but it is also tasty for those of us not trying to be healthy. These little Yogurt Covered Granola Clusters are super good, I’ve been enjoying them for lunch, and snacks for a week now and I still love them! The granola is homemade; it has honey and peanuts in it, and it is quite fabulous on its own! The yogurt coating is made with greek yogurt and is also great for coating other things like dried cherries! Yum, I love dried cherries covered in yogurt!! Anyway, on to the granola.

In a large bowl combine the oats, chopped cocktail peanuts, and wheat germ. Set aside.

In a separate smaller bowl stir together honey, brown sugar, melted butter, warm water, salt, and vanilla.

Stir it up well.

Add this honey mixture to the oats mixture.

Stir it all together well.

Grease two jelly-roll pans.

Use the larger end of a melon baller to scoop up the granola and place it onto the pans.

Bake at 250F for 1 hour. Cool completely.

While your granola cools you can make the yogurt coating. First, place water and vanilla in a small bowl. Sprinkle the gelatin over the top. Set aside.

In a microwavable bowl place greek yogurt, honey, and salt.

Stir together.

Microwave in 5-second bursts, stirring in between until the yogurt is very warm and pourable. Whisk in the gelatin mixture.

Whisk powdered sugar into the yogurt mixture.

Next, set up a drying area for the granola, line a jelly-roll pan with waxed paper and place a wire rack rack on top of that.

Now, place the cooled granola into the yogurt coating.

Gently fold it all together until the granola is well coated.

Pour the coated granola out onto the prepared pan, try not to dump it all in one place but spread it out a bit.

Allow to dry overnight. Enjoy!!!

Yogurt Covered Granola Clusters: A homemade honey/peanut granola covered in a yogurt coating! A welcome snack anytime.
Ingredients
  • For the Granola:
  • 1½c. old fashioned oats
  • ¼c. chopped cocktail peanuts
  • 2T. wheat germ
  • 3T. honey
  • 3T. brown sugar, packed
  • 2T. butter, melted
  • 4t. warm water
  • ¼t. salt
  • ½t. pure vanilla extract
  • For the Yogurt Coating:
  • 1T water
  • 1t. pure vanilla extract
  • ½t. unflavored gelatin
  • ¼c. greek yogurt
  • 1T. honey
  • pinch salt
  • 2c. powdered sugar
Method
  1. For the Granola:
  2. Preheat oven to 250F lightly grease two jelly roll pans.
  3. In a large bowl combine oats, peanuts, and wheat germ. Set aside.
  4. In a smaller bowl combine 3T. honey, brown sugar, melted butter, 4t. warm water, ¼t. salt, and ½t. vanilla.
  5. Pour the honey mixture into the oats and stir them together well.
  6. Use the larger end of a melon baller to scoop up the granola and drop it into little clusters on the prepared pans.
  7. Bake at 250F for 1 hour. Cool completely.
  8. For the Yogurt Coating:
  9. In a small bowl combine 1T. water and 1t. vanilla. Sprinkle the gelatin over the top. Set aside.
  10. In a microwave safe bowl combine greek yogurt, 1T. honey, and a pinch salt.
  11. Microwave in 5-second blasts until the yogurt is very warm and pourable.
  12. Whisk in the gelatin mixture.
  13. Whisk in the powdered sugar.
  14. Pour in the cooled granola and gently fold, until the granola clusters are completely coated.
  15. Pour the yogurt covered granola clusters onto a wire rack, that has waxed paper under it, to dry.
  16. Spread the clusters out so they don't all get stuck together in one lump.
  17. Allow to dry overnight.
