Epic Unicorn Bread: Monkey Bread Flavored with Cake Batter!

I’m super excited about this month. If you have signed up for my monthly email then you already know that the theme for April is Unicorn! Everything that I post this month is unicorn themed, isn’t it awesome?! Anyway, today’s recipe is for Unicorn Bread! It’s like a monkey bread only more magical, and majestic ; )

So how is Unicorn Bread different than monkey bread? Well first off, the dough is made with a cake mix, pretty delicious. Also, the dough balls are filled with a little bit of cake batter. Finally, the whole thing is topped off with a cake batter glaze and sprinkles! You can’t get much more unicorn then that can you?

First, we are going to make the cake batter filling. In the bowl of an electric mixer beat together soft butter, yellow cake mix, milk, and vanilla.

Beat in sprinkles!

Place this mixture on waxed paper covered surface.

Pat the filling out, then cut it into about 66 pieces.

Roll each piece into a ball and place the balls in a covered container in the refrigerator.

Now, let’s proceed to the dough. In a large bowl combine the yellow cake mix, yeast, water, salt, vanilla, and bread flour.

Mix together well. I just used my hands to do this, but you could probably use a mixer too. No need to knead, just mix the dough until it is well combined.

Place the dough in a well greased, cover it, and allow it to rise for a half hour. Then punch the dough down and allow it to rise for an additional half hour.

Place the dough on the counter and cut it into 66 pieces.

Working with one piece of dough at a time, press the dough out and place one of the cake batter filling balls in the middle of the dough.

Wrap the dough around the filling. Repeat with remaining dough and filling.

Dip each filled dough ball in melted butter.

Then dip it in sugar.

Then place the coated and filled dough balls in a greased bundt pan.

Repeat with all the dough balls.

If you have any remaining melted butter and sugar, combine them together.

Pour this mixture over the Unicorn Bread in the bundt pan.

Bake the Unicorn Bread at 350F for 40-50 minutes or until a skewer inserted into it comes out clean.

Cool the monkey bread in the pan for 5 minutes before placing your serving plate over the top of it.

Then just flip the whole thing over.

Remove the pan and ta-da! It’s almost done, and I already want to eat it.

Before we eat it, it needs a glaze, cake batter glaze to be precise. For this, place melted butter, vanilla, yellow cake mix, half&half, and powdered sugar in a small bowl. Whisk together until well combined.

Now simply drizzle the glaze over the Unicorn Bread.

Top with plenty of sprinkles.

Now you can eat it! The glaze adds a nice concentrated cake batter flavor, while the filling adds a burst of color and flavor to the bread. Unicorn Bread: It's basically a monkey beard with cake batter flavored dough, filling, and glaze! Oh, and plenty of rainbow sprinkles! Yeah, it's EPIC!
Ingredients
  • For the Cake Batter Fillings:
  • ¼c. soft butter
  • 1c. yellow cake mix
  • 1T. milk
  • ⅛t. pure vanilla extract
  • ⅓c. rainbow sprinkles
  • For the Cake Batter Dough:
  • 1c. yellow cake mix
  • 2¾t. yeast
  • 1¼c. warm water
  • ½t. salt
  • ½t. pure vanilla extract
  • 2½c. bread flour
  • ½c. melted butter
  • 1c. sugar
  • For the Cake Batter Glaze:
  • 3T. melted butter
  • 1t. pure vanilla extract
  • ½c. yellow cake mix
  • 3T. half&half
  • ½c. powdered sugar
  • rainbow sprinkles
Method
  1. For the Cake Batter Filling:
  2. In the bowl of an electric mixer beat together all the filling ingredients except the sprinkles. Mix until well combined.
  3. Stir in the sprinkles.
  4. Press the filling out onto a waxed paper. Cut the filling into 66 pieces. Roll the pieces into balls.
  5. Place the balls in an airtight container and refrigerate them until ready to use.
  6. For the Cake Batter Dough:
  7. In a large bowl combine the 1c. yellow cake mix, yeast, water, salt, ½t. vanilla, and bread flour. Mix until a soft dough forms. (no kneading required)
  8. Place the dough in a greased bowl and allow it to rise, covered, in a warm place for ½ an hour. Punch the dough down and allow the dough to rise for an additional ½ hour. Preheat oven to 350F and thoroughly grease a bundt pan.
  9. Divide the dough into 66 pieces. Working with one piece at a time press the dough flat, place a cake batter filling ball in the middle, and fold the dough up around the filling so that no filling is visible. Repeat with remaining dough and filling.
  10. Roll each filled dough ball in melted butter then in sugar and place it in the prepared bundt pan.
  11. If there is any leftover butter and sugar, that the dough balls were dipped in, just combine them together and drizzle that over the dough in the pan.
  12. Bake at 350F for 40-50 minutes or until a skewer inserted into the Unicorn Bread comes out clean. Cool for 5 minutes before turning the Unicorn Bread out onto a serving plate. Cool.
  13. For the Cake Batter Glaze:
  14. In a small bowl whisk together all of the glaze ingredients except the sprinkles. Whisk until well combined.
  15. Drizzle the glaze over the Unicorn Bread. Add sprinkles.
