Happy Birthday!!!

Well, it’s my birthday tomorrow anyway and I am very excited to share the recipe for my birthday cake with you! I love cookie dough, I hope you do too… well if you didn’t you probably wouldn’t be looking at this post… Anyway, if you love cookie dough like I do, then this is your cake: four layers of brown sugar cake with cookie dough balls baked right in, cookie dough frosting, with the outside covered with mini chocolate chips and cookie dough balls, and an epic surprise inside! What is the surprise? Well, the middle two layers of cake are hollowed out and filled with…wait… COOKIE DOUGH BALLS!!! So when you cut it they come spilling out and its ama-zing! Are you ready for this cake?

First, we get to make the cookie dough balls. In the bowl of an electric mixer beat together soft butter, sugar, brown sugar, milk, and vanilla.

Beat in flour and salt.

Beat in the mini chocolate chips.

Now line a small sheet pan with waxed paper. Use the small end of a melon baller to scoop out small dabs of dough.

Roll the bits of dough into balls and place them on the waxed paper lined pan.

Repeat until all the dough has been made into balls. It’s a bit time-consuming but so worth it! Place the dough balls in the freezer.

Next, we will work on baking the brown sugar cake. Begin by thoroughly buttering and flouring two 9-inch cake pans.

In the bowl of an electric mixer combine soft butter, whole milk, eggs, egg whites, and vanilla.

In a large bowl mix together cake flour, baking powder, sugar, brown sugar, and salt.

Stir the dry ingredients into the wet ingredients in the mixer.

Divide half the batter between the two pans, about 2 – 2.25 cups each pan.

Sprinkle the cakes with about a handful of cookie dough balls each.

Bake at 350F for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool in the pans about 10 minutes before removing the cakes from the pan and allowing them to cool completely on a wire rack. Wash and re-butter and flour your pans and bake the remaining batter, don’t forget the cookie dough balls. Once the cakes are cooled, freeze them.

Meanwhile, we can make the cookie dough frosting. In the bowl of an electric mixer beat together soft butter and brown sugar.

Beat in the milk and vanilla.

Lastly, beat in the flour.

Once the cake is frozen it is time to do some cake carving! Choose which two layers will be your middle layers. Then use a knife to cut a circle in the center of both layers it should be about 4-4.5 inches in diameter.

Ta-da! It’s a donut! The middle part is not going to be used so you can do whatever you want with it.

Now, smear a bit of frosting on your cake board. Place your first whole layer of cake on top, spread on cookie dough frosting. Place a layer of cake with a hole in the center on next, spread with frosting. Place the second layer of cake with a hole in it on top of that. Fill the hole in the center with cookie dough balls! Spread the layer of cake with frosting. Top with the remaining whole layer of cake. Cover the top and sides with cookie dough frosting.

Next, we get to cover the sides in mini chocolate chips!

Just use your hand to press the chips onto the side of the cake. It makes a bit of a mess but its fun.

Use the remaining cookie dough balls to make a top and bottom border for your cake.

Ingredients
  • For the Cookie Dough Balls:
  • 1c. butter, soft
  • ½c. sugar
  • 1c. brown sugar, packed
  • 3T. milk
  • 1t. pure vanilla extract
  • 2½c. flour
  • ¼t. salt
  • ⅔c. mini chocolate chips
  • For the Brown Sugar Cake:
  • 1⅓c. butter, soft
  • 1⅔c. whole milk
  • 3 eggs
  • 8 egg whites
  • 2½t. pure vanilla extract
  • 4c. cake flour
  • 2T. baking powder
  • ⅔c. sugar
  • 2c. brown sugar, packed
  • 1¼t. salt
  • For the Cookie Dough Frosting:
  • 3c. butter, soft
  • 4c. brown sugar, packed
  • 1T. pure vanilla extract
  • 3T. whole milk
  • 3c. flour
  • About half a bag mini chocolate chips to cover the sides of the cake
Method
  1. For the Cookie Dough Balls:
  2. In the bowl of an electric mixer beat together 1c. butter, ½c. sugar, 1c. brown sugar, 3T. milk, 1t. vanilla.
  3. Beat in 2½c. flour and ¼t. salt. Beat in ⅔c. mini chocolate chips.
  4. Line a small pan with waxed paper. Use the small end of a melon baller to scoop out dough, form the dough into balls and place them on the waxed paper lined pan.  Freeze.
  5. For the Brown Sugar Cake:
  6. Preheat oven to 350F. Generously butter and flour two 9-inch cake pans. Set aside.
  7. In the bowl of an electric mixer beat together 1⅓c. butter, 1⅔c. milk, eggs, egg whites, 2½t. vanilla.
  8. In a large bowl combine cake flour, baking powder, ⅔c. sugar, 2c. brown sugar, 1¼t. salt.
  9. Beat dry ingredients into the mixing bowl with the wet ingredients.
  10. Portion about 2¼c. of batter into each of the prepared pans. Sprinkle about a handful of frozen cookie dough balls onto each.
  11. Bake at 350F for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool 10 minutes in the pan before removing the cakes from the pans to cool on wire racks. Wash the pans and re-grease and flour them.
  12. Divide the remaining batter between the two pan. Sprinkle with about a handful each of cookie dough balls. Bake in the same manner as before.
  13. Once the cakes have cooled completely, freeze them.
  14. For the Cookie Dough Frosting:
  15. In the bowl of an electric mixer beat together 3c. butter and 4c. brown sugar.
  16. Beat in 3T. milk and 1T. vanilla. Beat in 3c. flour.
  17. Assemble:
  18. Once the cakes are frozen cut a 4- 4.5-inch circle into the center of two layers (the bit you cut out is extra, so you can do whatever you want with it).
  19. Place a small amount of frosting on your cake board. Place a whole layer of cake on top of it, spread with frosting.
  20. Place a layer with a hole in it on top of that, spread with frosting. Place the second layer with a hole in it on top of that.
  21. Fill the middle with cookie dough balls.
  22. Spread the ring of cake with frosting. Top with remaining whole layer of cake.
  23. Frost the top and sides with the cookie dough frosting.
  24. Press mini chocolate chips onto the side of the cake with your hands.
  25. Use remaining cookie dough balls to make a top and bottom border for the cake.
