Fully Awesome Triple Cake Batter Ice Cream

Don’t deny it you know you are awesome! Otherwise, you wouldn’t be here looking at this Triple Cake Batter Ice Cream. How can it even be triple cake batter anyway? Let me explain, first the ice cream itself has yellow cake mix in it, then there is a thicker cake batter ripple, and thirdly there are little bites of cake batter covered in sprinkles in it! I know you’re already drooling, that’s okay.

Before we get into the recipe, however, I want you to know that I had a tiny bit of trouble with it at first, specifically the ice cream part. The first time I made the ice cream I stirred the cake mix right in with the half & half in the saucepan, but once it started to boil the cake mix also started to cook! I mean actually bits of cooked cake in the corners of the pan… not good. The second time I whisked the cake mix in with the egg yolks, but the cake mix still ended up cooking. The third time I just stirred the cake mix into the ice cream base after all the cooking had finished and it was good. Anyway, that’s just a heads up to you. If at first, you don’t succeed, try, try again!

Let’s start by making the ice cream. In a small bowl whisk together the egg yolks and sugar until light and fluffy. Set aside.

In a medium saucepan bring the half & half to a boil.

Return the saucepan to the heat and stir and cook until the mixture is thick enough to coat the back of a wooden spoon. Remove the saucepan from the heat and whisk in the cake mix.

Next whisk in the vanilla. Then refrigerate the mixture overnight.

Meanwhile, you can make the cake batter ripple. In the bowl of an electric mixer beat together the cake mix and milk, until well combined. Set aside.

You can also make the cake batter bites now. In the bowl of an electric mixer mixer beat together the cake mix, powdered sugar, and milk.

Pat the resulting mixture out on the counter and cut it into small pieces with a pizza cutter.

Sprinkles close up!! Just because it’s fun.

Roll each piece into a ball. Then coat the cake batter ball in tiny round rainbow sprinkles (nonpareil is their official name). Place the cake batter bites in an airtight container until ready to use.

Once the ice cream is cooled in the refrigerator it’s time to freeze it in your ice cream maker! Once the ice cream is frozen layer it with the ripple and bites: half the ice cream, half the ripple, half the bites, repeat, give it a few stirs to distribute the ripple and freeze until ready to serve!

If you are a cake batter fan then this is the ice cream for you! Perhaps, you know someone who hates cake but loves ice cream, this is the perfect ice cream to make them for their birthday! Honestly, the cake batter bites could actually be a stand-alone treat, they are pretty delicious… That being said try not to eat them all before they go in the ice cream! I have only used yellow cake mix to make this recipe but I’m sure you could substitute other cake mix flavors: white cake mix, chocolate cake mix, even strawberry would be great! You could even try carrot cake if you’re into that kinda thing… Anyway, test it out and have fun.

Triple Cake Batter Ice Cream: This ice cream is loaded with cake batter! The ice cream is infused with cake batter, then there is a cake batter ripple, and cake batter bites! It's amazing!
Ingredients
  • For the Cake Batter Ice Cream:
  • 6 egg yolks
  • ½c. sugar
  • 2½c. half & half
  • ¾c. cake mix (I used yellow)
  • 1t. pure vanilla extract
  • For the Cake Batter Ripple:
  • ⅔c. cake mix (I used yellow)
  • 3T. milk
  • For the Cake Batter Bites:
  • 1¼c. cake mix (I used yellow)
  • 1c. powdered sugar
  • 3T. milk
  • lots of rainbow nonpareils
Method
  1. For the Cake Batter Ice Cream:
  2. In a small bowl whisk together the egg yolks and ½c. sugar until light and fluffy. Set aside.
  3. In a medium saucepan bring the half & half to a boil.
  4. Carefully whisk ½c. of the boiling half & half into the egg yolks. Whisk all of the egg yolk mixture into the saucepan.
  5. Return the saucepan to the heat. Cook and stir until the mixture is thick enough to coat the back of a wooden spoon.
  6. Remove the saucepan from the heat and stir in the ¾c. cake mix and the vanilla. Refrigerate overnight. (make the ripple and bites now)
  7. Freeze in an ice cream maker according to the manufacturer's directions.
  8. Once frozen layer the ice cream in a freezable container: half the ice cream, half the ripple, half the bites, repeat once, then give it all a couple of stirs so that the ripple is evenly distributed.
  9. For the Cake Batter Ripple:
  10. In the bowl of an electric mixer beat together the ⅔c. cake mix and 3T. milk until well combined.
  11. Place in an airtight container until ready to use.
  12. For the Cake Batter Bites:
  13. In the bowl of an electric mixer beat together 1¼c. cake mix, powdered sugar, and 3T. milk until well combined.
  14. Pat this mixture out on the counter, try and make it as even as possible. Use a pizza cutter to cut the dough into small pieces.
  15. Roll each piece into a ball and cover it with the rainbow nonpareils. Place the bites in an airtight container until ready to use.
