Super Peanut Butter Ice Cream

Do you love peanut butter? Because I totally do. Some might say that this ice cream is a bit over the top with peanut butter, but if you love peanut butter like I do then this is the ice cream for you! The ice cream itself is peanut butter flavored, but then there is also a peanut butter swirl, and peanut butter cookie dough in it! I know, a bit much? No, really it isn’t it is totally fabulous, as long as you like peanut butter you are going to love this Super Peanut Butter Ice Cream.

First we start with the ice cream. Which is super easy. Just take all the ice cream ingredients and mix them all up in a blender.

Then refrigerate it for a bit so that is good and cold.

While the ice cream is chilling, make the cookie dough. Mix all the cookie dough ingredients together until well combined.

Then shape the dough into tiny little balls, I actually used the small side of a melon baller to get the size I had. Place the balls on a sheet pan lined with waxed paper and put the cookie dough into the freezer until the ice cream is ready.

Now, your ice cream should be ready to freeze. Just freeze it in your ice cream maker according to the manufacturers instructions. (I just want to say that I LOVE my ice cream maker I just got it last year on clearance at Kroger. It is so awesome. It freeze ice cream in like 20 minutes or less. Sorry, back to the post…)

When your ice cream is almost ready, melt half a cup of peanut butter.

Once your ice cream is ready assemble the cookie dough, melted peanut butter, and the container you are going to put the ice cream in.

Next, layer your ice cream like this: ice cream, melted peanut butter, cookie dough, ice cream, melted peanut butter, cookie dough. Then just give it a few swirls with a spatula. Freeze until hard.

Super Peanut Butter Ice Cream: If you love peanut butter then this is the ice cream for you! A peanut butter ice cream with a peanut butter ripple, and peanut butter cookie dough! Pretty much amazing!
Ingredients
  • For the Peanut Butter Ice Cream:
  • ¾c. peanut butter (I used JIF)
  • ¾c. sugar
  • 2⅔c. half and half
  • pinch of salt
  • ¼t. vanilla
  • For the Peanut Butter Cookie Dough:
  • ¼c. peanut butter
  • ¼c. butter, softened
  • ½c. brown sugar
  • ¼t. vanilla extract
  • ½c. flour
  • 1T. mini chocolate chips
  • For the Peanut Butter Swirl:
  • ½c. peanut butter
Method
  1. For the Peanut Butter Ice Cream:
  2. Mix all the above ingredients in a blender until well mixed.
  3. Chill until cold.
  4. Freeze ice cream in an ice cream maker according to the manufacturer's directions.
  5. Layer ice cream, melted peanut butter, cookie dough, ice cream, melted peanut butter, cookie dough.
  6. Swirls with a spatula. Freeze until hard.
  7. For the Peanut Butter Cookie Dough:
  8. (Start this while the ice cream is in the refrigerator chilling)
  9. Mix all cookie dough ingredients together until well combined.
  10. Shape dough into very small balls, you can use the small end of a melon baller if you'd like.
  11. Place balls onto sheet pan lined with waxed paper.
  12. Place cookie dough in freezer until the ice cream is ready for layering.
  13. For the Peanut Butter Swirl:
  14. (Do this when your ice cream is almost ready for layering)
  15. Melt peanut butter for about 30 seconds in the microwave, stir and allow to cool until ice cream is ready.
