This is a super easy recipe to make, you don’t even need to bake them! It has three good sources of protein in it too: quinoa flakes, chia seeds, and whey protein powder! Oh, I forgot it has peanut butter in it too. This is basically the same recipes the No Bake Multi-Grain Cookies that I made last January. The main difference is that I replaced the cocoa powder with whey protein powder in these Protein No-Bake Cookies. Result? More protein! What are we waiting for, let’s make this!
In a medium saucepan combine the sugar, butter, protein powder, and milk.
Meanwhile, you can measure out the quinoa flakes, chia seeds, and quick cooking oats. Set, aside.
Stir and heat until the butter is melted. Remove the saucepan from the heat and stir in the peanut butter until it is melted.
Stir in the vanilla.
Now just stir in the quick oats, quinoa flakes, and chia seeds.
Stir until well combined.
Spoon the mixture onto parchment paper.
Before the cookies set you can use your fingers to get off all the uneven edges if you wish.
Once the cookies are set then you just have to place the cookies in an air-tight container and be ready to enjoy them! They are a great after or pre-workout snack or a great protein filled dessert. These cookies are very yummy and a great source of protein.
