Delicious After Workout High Protein Cupcakes

So, you’ve started working out and you want to eat more protein to support all your new muscles! But, you also can’t quite make yourself cut out the sugar… Answer? High protein cupcakes! Yeah, that can happen. These cupcakes have whey powder in the cupcake and also in the frosting plus peanut butter, so it has plenty of protein!

First, let’s make these cupcakes! The cupcake recipe is basically an adaptation of these Banana Cupcakes that I made before. The main changes are that I replaced the banana with peanut butter and 1/2c. of the flour with protein powder. To make them: in the bowl of an electric mixer beat together butter, sugar, and vanilla.

Stir in the eggs, peanut butter, and buttermilk.

Next, add the flour, baking powder, salt, and protein powder. You can use any flavor you want to, I tried chocolate and vanilla. I recommend both!

Line a muffin pan with cupcake papers. I always like to grease my papers, but you don’t have too. Scoop the batter into the pan.

Bake at 350F for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

Cool the cupcakes on a wire rack.

Meanwhile, you can make the frosting (a modification of the same frosting recipe for frosting used on the Banana Cupcakes). I change two things to make this frosting: 1. I replaced 2c. of the powdered sugar with protein powder and 2. I replaced 1 1/4c. of the vegetable shortening with peanut butter. The resulting frosting is delicious and high in protein! So, to make it, in the bowl of an electric mixer whip together the powdered sugar, salt, vanilla, butter flavoring, and protein powder! Again you can use any flavor you want too, I tried vanilla and chocolate, they were both good.

Next, whip in the water, until well combined.

It will look pretty runny.

Whip in the peanut butter and shortening.

Then whip in the butter.

Whip until very well combined and the butter is no longer chunky.

Refrigerate until ready to use. Then pipe the frosting onto the fully cooled cupcakes.

Then just add some sprinkles or chocolate chips! And done!

Now, that you have some delicious and high protein cupcakes it’s time to go workout so you can have one! Or you could just have one now… Pre-workout protein is good too, right? Anyway, there’s plenty of protein in these from the whey protein as well as the peanut butter so yay! Lift those weights, build that metabolism, and then help power those muscles with protein cupcakes! Well, that’s the hope anyway 😀

Protein Cupcakes: These cupcakes have whey protein powder and peanut butter in both the cupcake and the frosting making them a great high protein treat!
  • For the Cupcakes:
  • ½c. soft butter
  • ¾c. sugar
  • 1t. pure vanilla extract
  • 2 eggs
  • 1c. peanut butter
  • 1c. buttermilk
  • 1c. flour
  • ½c. whey protein powder (any flavor, that goes with peanut butter)
  • 1½t. baking powder
  • ½t. salt
  • For the Frosting:
  • 4c. powdered sugar
  • 2c. whey protein powder (any flavor that goes with peanut butter)
  • ½t. salt
  • 2t. pure vanilla extract
  • 1t. butter flavoring
  • 1c. water
  • 1¼c. peanut butter
  • 1½c. vegetable shortening
  • ¾c. cold butter
  1. For the Cupcakes:
  2. Preheat oven to 350F. Place cupcake papers in a muffin pan and grease them with cooking spray if desired.
  3. In the bowl of an electric mixer beat together the ½c. soft butter, sugar, and 1t. vanilla.
  4. Stir in the eggs, 1c. peanut butter, and buttermilk.
  5. Stir in the flour, ½c. protein powder, baking powder, and ½t. salt. Mix until well combined.
  6. Portion the batter into the cupcake papers (I got 18 cupcakes total).
  7. Bake at 350F for 20-25 minutes or until a toothpick inserted in the cupcakes comes out clean. Cool the cupcakes on a wire rack.
  8. For the Frosting:
  9. In the bowl of an electric mixer whip together the powdered sugar, 2c. protein powder, ½t. salt, 2t. vanilla, and 1t. butter flavoring.
  10. Whip in the water.
  11. Next, whip in the 1½c. peanut butter, shortening, and ¾c. butter.
  12. Whip until smooth and fluffy
  13. Pipe the frosting on the cooled cupcakes and decorate as desired.
