Peach Cobbler Ice Cream with Peach Cobbler Mixed Right In!

I love peach cobbler, I think it’s one of my favorite comfort foods, especially if it’s topped with ice cream! But what if the peach cobbler was in the ice cream and the ice cream and peach cobbler were one?! I know it’s kind of a crazy idea, but as it turns out it’s a delicious one. This Peach Cobbler Ice Cream has homemade peach cobbler mixed right into it. Friend, I am telling you right now that this is some goooooood ice cream. Also, the ice cream alone is a good basic vanilla ice cream and the peach cobbler is a good stand alone dessert too. Two for one!

So let’s make this! You can start with either the ice cream or the cobbler first, it doesn’t really matter because they will both have to be fully cooled before they can be mixed together. But I’ll start with the cobbler. In an 8×8-inch baking pan place butter. Place the pan in the preheating oven to melt the butter.

Meanwhile, in a large bowl whisk together the flour, sugar, baking powder, and milk. Set aside.

In a different large bowl place your peaches, they should be peeled, the pit removed, and sliced or chopped. Stir some sugar into the peaches.

Once the butter in the pan has melted remove it from the oven and pour the batter into the pan.

Top the batter with the sugared peaches.

Bake the cobbler at 350F for 35-45 minutes or until golden brown and it’s smelling divine! Cool the cobbler completely, and try not to eat it while you make the ice cream ; )

Let’s move on to the ice cream. In a small bowl whisk together the egg yolks and sugar until light and fluffy, set aside.

In a medium saucepan bring sugar and heavy cream to a boil. Once boiling remove the saucepan from the heat.

http://epicsweet.com/peach-cobbler-ice-cream/Whisk about 1/2c. of the boiling cream mixture into egg yolks.

Then whisk the egg yolk mixture back into the saucepan.

Return the saucepan to the heat and stir it until the mixture thickens enough to coat the back of a wooden spoon and hold its shape after you swipe your finger through it.

Remove the saucepan from the heat and stir in the vanilla. Refrigerate overnight. Freeze the ice cream in your ice cream maker cream maker according to the manufacturer’s directions.

Once frozen place the ice cream in a freezable container and stir in spoonfuls of the peach cobbler. Freeze until ready to serve!

Just think you could use pretty much any kind of fresh fruit in the cobbler cherries, blueberries, raspberries, anything! and the ice cream you could modify that too. Perhaps you want to modify it to be chocolate ice cream. Then you could make chocolate ice cream with raspberry or cherry cobbler in it! The possibilities are limitless! Peach Cobbler Ice Cream with Peach Cobbler Mixed Right In!

Peach Cobbler Ice Cream: this is a vanilla ice cream with homemade peach cobbler mixed right into it! It is so amazing!!!
Ingredients
  • For the Peach Cobbler:
  • ¼c. butter
  • ¾c. flour
  • ¾c. sugar
  • 1t. baking powder
  • ¾c. milk
  • 1½c. fresh peaches, peeled, cored, and sliced or chopped
  • ½c. sugar
  • For the Vanilla Ice Cream:
  • 6 egg yolks
  • ½c. sugar
  • 2½c. heavy cream
  • ½c. sugar
  • ½t. pure vanilla extract
Method
  1. For the Peach Cobbler:
  2. Place the butter in an 8x8-inch baking pan. Place the pan in the oven and preheat the oven to 350F.
  3. In a large bowl combine the flour, ¾c. sugar, baking powder, and milk until well combined. Set aside.
  4. In another large bowl combine the peaches and ½c. sugar.
  5. Once the butter in the pan in the oven has melted remove the pan from the oven and pour the batter in the pan. Then top the batter with the sugared peaches.
  6. Bake the cobbler at 350F for 35-45 minutes or until golden brown. Cool completely.
  7. For the Vanilla Ice Cream:
  8. In a small bowl whisk together the egg yolks and ½c. sugar until light and fluffy. Set aside.
  9. In a medium saucepan combine the heavy cream and ½c. sugar. Bring to a boil stirring often.
  10. Remove the saucepan from the heat and whisk about ½c. of the cream into the egg yolks, then whisk all of the egg yolks back into the saucepan with the cream.
  11. Return the saucepan to the heat and stir and cook until the mixture is thick enough to coat the back of a wooden spoon.
  12. Remove the saucepan from the heat and stir in the vanilla. Refrigerate overnight.
  13. Freeze the ice cream in an ice cream maker according to the manufacturer's directions.
  14. Place the ice cream in a freezable container and spoon in the fully cooled peach cobbler. Stir well distributing the cobbler evenly. Freeze until ready to serve.
