Delightful No Bake Multi-Grain Cookies with Chia

Hey there,

Are you ready for some healthy sweets?! I know I don’t typically do healthy, ahem Epic Sweet, but during the month of January I’ve made a few “healthy” desserts for you to try. By healthy, I mean, that I have taken recipes and added healthy ingredients to them. The sugar and yummy ingredients have NOT been reduced or replaced with other “healthier” alternatives. After all, it is always easier to add things to your diet then it is to take things out, that just leads to more cravings.

So, this first recipe for January is Delightful No Bake Multi-Grain Cookies with Chia! To make this recipe up I took a basic No Bake Cookie recipe and replaced the quick cooking oats with quinoa flakes and add a half cup of chia seeds. The first batch that I made turned out a bit dry and had a slightly odd aftertaste. To remedy the dryness I reduced the quinoa flakes by half a cup (due to the added half cup of chia seeds). Then to get rid of the after taste I replaced one cup of the quinoa flakes with quick cooking oats. This not only got rid of the odd after taste but it also made the cookies multi-grain and not just quinoa no bake cookies. All in all, I can say that these cookies are super tasty and taste basically the same as a regular no bake cookies, they just have the added health benefits of quinoa and chia. Delicious + healthy= the way all “healthy” food should be.

So let’s get started with today’s recipe: No Bake Multi-Grain Cookies. In a saucepan place the sugar, butter, cocoa powder, and milk.

Stir together and heat until the butter is melted.

Stir in the peanut butter until melted.

Remove the saucepan from the heat and add the vanilla, quinoa flakes, chia seeds, and quick oats.

Stir together well.

Spoon this mixture onto a sheet of waxed or parchment paper to set.

So here is a picture of the two batches together once they were set. The top cookies are from the second batch, and the bottom cookies are from the first batch. See the difference? The bottom batch is way drier because of the extra half cup of chia seeds, while the top cookies are much nicer because the dry ingredients have been reduced by half a cup.

So, there you have it No Bake Multi-Grain Cookies. An easy and delicious cookie with healthy ingredients added to make the cookies healthy… or at least healthier. No Bake Multi-Grain Cookies: no bake cookies with the added benefits of quinoa and chia! They still taste awesome too!
Ingredients
  • 2c. sugar
  • 1 stick of butter
  • ¼c. cocoa powder
  • ½c. milk
  • ½c. peanut butter
  • 1t. pure vanilla extract
  • 2c. quinoa flacks
  • ½c. chia seeds
  • 1c. quick cooking oats
Method
  1. In a medium saucepan heat and stir the sugar, butter, cocoa powder, and milk together until the butter is melted.
  2. Stir in the peanut butter until melted.
  3. Remove the saucepan from the heat and add the vanilla, quinoa flacks, chia seeds, and quick oats. Stir together until well combined.
  4. Spoon this mixture onto waxed or parchment paper to set.
