Nanner and Niller Cupcakes

Have you ever had Naners and Nillers? I have always loved that stuff! It is so good, but have you ever wanted to be able to eat it without a spoon? Well, with these fabulous little cupcakes you can! All the flavor of Naners and Nillers only finger food. The vanilla wafers add a bit of crunch while the banana adds flavor and moisture, and the frosting adds the rich creaminess.  If you like Naners and Nillers you should definitely try these little beauties.

The recipe starts with cupcake pans. First, you must line the pans with cupcake papers and then spray them with cooking spray.

Next, you crush a box of Nilla wafers. I put them in a zip up bag and crushed them with a rolling pin.

Melt a stick of butter and mix some sugar with it.

Add the crushed wafers.

Mix it all up together.

Now, place about 1T. of the wafer mixture into each prepared paper.

Squish it down with either the bottom of a glass or a tamper downer (technical term) actually it is called a tart tamper, but I like tamper downer better. Set the extra wafer mixture aside for later.

Next, the cupcake batter. Cream butter, vanilla, and sugar together.

Add the eggs.

Now you need to mash up two very ripe bananas. I use a fork and mash them on a plate.

Mash them up really good.

Add the bananas to the batter.

Mix up the dry ingredients.

Add the dry ingredients alternately with some milk to the butter/banana mixture.

Now, portion the batter in between the 18 prepared cupcake papers.

Sprinkle them with the remaining wafer mixture.

Bake! Allow the cupcakes to cool completely on a wire rack. I should mention that these are great at this point and they really don’t need frosting, but they are just banana muffins then – not Naner and Niller Cupcakes.

While the cupcakes cool prepare the frosting (this is my go to frosting). Start by mixing lots of powdered sugar with the salt and with the flavorings: vanilla, almond, and butter.

Add 1 cup boiling water.

Whip this while it cools, the best way to tell when it is cool is to stick your finger into it, if it feels just barely warm it is ready.

Next, whip in the shortening. At this point, it looks super gross, like there is no way this will turn out, but just wait.

Add the cold butter cut into chunks.

Whip for a good 10-20 minutes. See, I told you it would turn out alright.

Now, fit a piping bag with a large star tip and fill the bag with frosting. Also, get some chocolate jimmies, and little banana shaped candies (you can either pick them out of a box of Runts or buy them at a candy shop).

Nanner and Niller Cupcakes

Naner and Niller Cupcakes: There is Nilla wafers in the bottom and sprinkled on top of the cupcakes, the cupcakes are banana flavored, and the frosting adds the creaminess! All together a great cupcake for anyone that likes nanner and niller pudding.
Ingredients
  • For the cupcake:
  • 11oz. Nilla Wafers
  • 1 stick butter
  • 2T. sugar
  • ½c. butter, soft
  • ¾c. sugar
  • 1t. vanilla extract
  • 2 eggs
  • 2 very ripe bananas, mashed
  • 1½c. flour
  • 1½t. baking powder
  • ½t. salt
  • ½c. milk
  • For the frosting:
  • 6c. powdered sugar
  • ½t. salt
  • 2t. vanilla extract
  • 1t. almond extract
  • 1t. butter flavoring
  • 1c. water, boiling
  • 2¾c. vegetable shortening
  • 1½ sticks cold butter, cut into small cubes
Method
  1. For the cupcake:
  2. Preheat oven to 350F. Line 18 cupcake tin wells with cupcake papers and spray them with cooking spray. Set aside.
  3. Crush the Nilla Wafers in a bag with a rolling pin.
  4. Melt 1 stick butter, stir in the sugar and crushed wafers.
  5. Using a tart tamper or bottom of a glass pat 1 T. of the mixture into each paper. Set aside the rest of the Nilla mixture for later.
  6. Cream the soft butter, vanilla, and sugar together.
  7. Add the eggs and mix well.
  8. Add the banana and stir well.
  9. Mix the salt, baking powder, and flour together.
  10. Add this alternately with the milk to the creamed mixture.
  11. Portion into the prepared pan/s and top with remaining Nilla crumbles.
  12. Bake at 350F for 20-25 minutes or until a toothpick inserted into the middle of one comes out clean.
  13. Cool completely on a wire rack.
  14. Pipe frosting (recipe follows) on with a large star tip. Use banana shaped candies and chocolate jimmies to decorate.
  15. For the frosting:
  16. Stir the powdered sugar, salt, and flavorings together in the bowl of an electric mixer fitted with a whip attachment.
  17. Add the boiling water and whip until cooled.
  18. Whip in the shortening.
  19. Whip in the butter cubes.
  20. Increase the speed to medium-high and whip until light and fluffy about 10-20 minutes.
