Mini Peanut Butter Sandwich Cookies

Howdy,

Today’s recipe is all about the peanut butter! These Mini Peanut Butter Sandwich Cookies are, basically, a peanut butter cookie filled with a peanut butter filling (a variation of the homemade Oreo filling that I shared earlier, I told you I’d use it again!) and then dipped in assorted candy coatings! They are just a bit dangerous because they are so small, way too easy to eat! If you like peanut butter, you are gonna love these.

The recipe starts with the cookies! In the bowl of an electric mixer cream together butter, peanut butter, brown sugar, sugar, and vanilla.

Stir in one egg.

Stir in the baking powder and flour until well combined.

Roll the dough out onto a powdered sugar covered surface. I like to use powdered sugar to roll out cookies because then you can roll the dough out as much as you need to without having the flavor of your cookie suffer.

Use some small cookie cutter to cut out shapes and place the shapes on an ungreased cookie sheet. I used a tiny leaf cutter. Make sure to cut out the cookies in pairs, because you will need the same shaped cookie for each side of the sandwich.

Bake the cookies at 375F for 8-12 minutes or until slightly golden. Cool completely.

In the meantime, you can make your peanut butter filling. In the bowl of an electric mixer combine peanut butter, vegetable shortening, vanilla, butter flavoring, and powdered sugar. Beat well.

Roll the filling out onto a powdered sugar surface and cut into shapes using the same cutters as you used for the cookies so that the filling will fit into the cookies perfectly.

Fill each pair of cookies with the appropriate shape filling. Press together slightly. Repeat with all cookies.

Once the cookies are all filled it’s time for dipping! Gather together a variety of candy melts. I used red, orange, and green colored candy melts as well as light cocoa, dark cocoa, peanut butter, butterscotch, and s’more flavored candy melts. Melt a few of one kind of candy melt in a small bowl according to the manufacture’s direction. Dip part of the sandwich cookie in the melted candy coating. Set the cookies on waxed paper to dry. Repeat with remaining candy melts and cookies.

Mini Peanut Butter Sandwich Cookies: Peanut butter cookies filled with a rich peanut butter filling and dipped in a variety of candy melts!
Ingredients
  • For the Cookies:
  • 1 stick butter, soft
  • ½c. peanut butter
  • ½c. sugar
  • ½c. brown sugar, packed
  • 1 egg
  • 2t. pure vanilla extract
  • 2t. baking powder
  • 1½c. flour
  • For the Filling:
  • ½c. peanut butter
  • ¼c. vegetable shortening
  • 1t. pure vanilla extract
  • 1t. butter flavoring
  • 1½c. powdered sugar
  • To Assemble:
  • Assorted candy melts
Method
  1. For the Cookies:
  2. Preheat oven to 375F.
  3. In the bowl of an electric mixer combine soft butter, peanut butter, both sugars, and vanilla.
  4. Stir in the egg. Stir in baking powder and flour.
  5. Roll the dough out to ⅛ inch thick on a well powdered sugared surface. Cut with small cookie cutter. Place cut dough onto ungreased cookie sheets.
  6. Bake at 375F for 8-12 minutes or until slightly browned. Cool completely.
  7. For the Filling:
  8. Combine all filling ingredients in the bowl of an electric mixer. Beat well to combine.
  9. Roll filling out to ¼ inch thickness on a well powdered sugared surface. Cut out using the same cutters as for the cookies.
  10. Sandwich each filling in between two cookies of the same shape.
  11. To Assemble:
  12. In a small bowl melt one flavor/color of candy melts according to manufacture's directions.
  13. Partly dip a cookie in the melted candy coating. Set on waxed paper to dry.
  14. Repeat with remaining candy melts and cookies.
