Hot Fudge Malt Ice Cream

Hello,

Growing up I remember sometimes when we would go out to a fast food restaurant my dad would order a hot fudge malt with extra hot fudge. I never understood why; I liked to get ice cream cones better. As I have grown up though I have come to like malts (although I would still rather have a dipped cone). Anyway, this Hot Fudge Malt Ice Cream is very good. The chocolate ice cream base has chocolate malt powder in it, and chopped malted milk balls, and a thick ribbon of fudge!

We start with the chocolate malt ice cream base. In a small bowl whip together egg yolks and sugar until light and fluffy. Set aside.

In a large bowl place milk chocolate chips, set aside.

In a saucepan bring 1/2 & 1/2, sugar, and chocolate malt powder to a boil. Stir often.

Whisk a small amount of the boiling cream into the egg yolks.

Then whisk all of the egg yolks into the saucepan with the cream. This is called tempering, it helps to bring the eggs up to temperature slowly so that they don’t just turn into an omelet.

Return the mixture to the heat and stir until the mixture thickens. The mixture should be thick enough to coat the back of a wooden spoon and still hold its shape after you run your finger through it.

Pour the chocolate malt ice cream base over the milk chocolate chips, stir until melted. Cool and then chill.

While the ice cream chills, you can make the hot fudge. In a sauce pan mix together sugar, cornstarch, and cocoa powder.

Add milk.

Stir together well and bring to a boil. Stir often until well thickened.

Remove from heat and stir in butter and vanilla. Stir until the butter is melted. Chill.

Once the ice cream is chilled it’s time to freeze it in your ice cream maker according to manufacturer’s directions. While your ice cream freezes you can chop up your malted milk balls.

Once the ice cream is ready, turn off your ice cream maker and stir in the chopped malt balls.

Layer the Hot Fudge Malt Ice Cream in a freezable container: ice cream, fudge, ice cream, fudge, and then give it a nice swirl together so that the fudge forms a nice ripple.

Hot Fudge Malt Ice Cream

Hot Fudge Malt Ice Cream: A creamy chocolate malt ice cream with crunchy, chopped malt balls mixed in and a rich hot fudge ripple!
Ingredients
  • For the Chocolate Malt Ice Cream:
  • ½c. milk chocolate chips
  • 6 egg yolks
  • ⅓c. sugar
  • 2½c. half & half
  • ⅓c. sugar
  • ½c. chocolate malt powder
  • 1½c. malted milk balls, chopped
  • For the Hot Fudge:
  • 1c. sugar
  • 3T. cornstarch
  • 5T. cocoa powder
  • 1c. milk
  • 4T. butter
  • 1t. pure vanilla extract
Method
  1. For the Chocolate Malt Ice Cream:
  2. Place the milk chocolate chips in a large bowl, set aside.
  3. In a small bowl whip together the egg yolks and ⅓c. sugar until light and fluffy. Set aside.
  4. In a medium saucepan bring the half & half, ⅓c. sugar, and chocolate malt powder to a boil stirring often.
  5. Whisk a small amount of the malt mixture into the whipped eggs. Whisk all of the egg mixture back into the saucepan.
  6. Return the mixture to the heat and cook and stir until thick enough to coat the back of a wooden spoon.
  7. Pour the malt mixture over the milk chocolate chips. Stir until melted. Chill.
  8. For the Hot Fudge:
  9. Meanwhile, in a saucepan mix together 1c. sugar, cornstarch, and cocoa powder.
  10. Stir in milk. Bring the mixture to a boil until it is well thickened.
  11. Remove from heat and stir in the butter and vanilla until the butter is melted. Cool and chill.
  12. Once the Chocolate Malt Ice Cream is chilled freeze it in your ice cream maker according to manufacturer's directions.
  13. Once the ice cream is frozen turn off your ice cream maker and stir in the chopped malt balls.
  14. Layer the ice cream in a freezable container: half the ice cream, half the hot fudge, the remaining ice cream, then the remaining fudge. Give it a good couple stirs so that the hot fudge gets rippled throughout the ice cream. Freeze until ready to enjoy.
