Healthy Granola Cookies with Yogurt Covered Cranberries

Healthy Granola Cookies with Yogurt Covered Cranberries are one of my new favorite cookies. The yogurt covered cranberries add a delicious burst of tart, creamy flavor, and the granola adds nice crunchiness. Why are they healthy? Granola and cranberries, that’s why! I admit that these cookies don’t have reduced sugar or anything like that I just added healthy ingredients. We all think of granola as being good for us, all that fiber and what not and if you get a protein granola, even better! Cranberries are good for you too, antioxidants and all. They taste super delicious. Of course, I love pretty much any yogurt covered anything… If you do to then you’ll probably love these cookies too!

So these Granola Cookies are, basically, just an adaptation of the Chippy Banana Oat Cookies that I posted back in June. I added granola and yogurt covered cranberries to the cookies in place of all the chips that were in the Chippy Banana Oat Cookies. Oh, I also left out the oatmeal and the banana. The first batch of these Granola Cookies turned out a bit flat and not quite what I wanted… like at all! As you can see from the picture below. I suppose I should have know that would happen since I left out the oatmeal. Also, the yogurt coating melts a bit and that was also probably a factor. To remedy the situation I just added about a cup more flour, which worked perfectly.

So let’s make these Healthy Granola Cookies with Yogurt Covered Cranberries! In the bowl of an electric mixer beat together the butter, brown sugar, sugar, and vanilla.

Add the eggs, and stir well.

Beat in the flour. baking soda, and salt until well combined.

Stir in the granola and yogurt covered cranberries.

Scoop the dough onto ungreased baking sheets and bake at 350F for 12-14 minutes of until golden brown. Remove the cookies to cool on a wire rack.

These cookies are not any harder to make than regular chocolate chip cookies and they taste fabulous, plus they have the added health benefits of cranberry, yogurt, and granola. You could even use different flavors of granola to add different flavor to the cookies. I think granola with freeze-dried berries in it could be quite delicious! Or I once had a Salted Caramel Apple Granola that would be awesome in cookies, but when I went to make these cookies I couldn’t find it anywhere. These Granola Cookies are excellent, you’ll be glad to have them in the cookies jar… while they last.

Healthy Granola Cookies with Yogurt Covered Cranberries: The crunch of the granola and the creamy, tartness of the yogurt covered cranberries makes these cookies ideal for your cookie jar!
Ingredients
  • 1c. butter, soft
  • 1c. brown sugar, packed
  • ½c. sugar
  • 2t. pure vanilla extract
  • 2 eggs
  • 3½c. sugar
  • 1t. baking soda
  • ½t. salt
  • 2c. granola
  • 2c. yogurt covered cranberries
Method
  1. Preheat oven to 350F.
  2. In the bowl of an electric mixer cream together the butter, sugars, and vanilla.
  3. Stir in the eggs.
  4. Beat in the flour, baking soda, and salt until well combined.
  5. Stir in the granola and yogurt covered cranberries.
  6. Scoop the dough by heaping tablespoons onto ungreased cookie sheets. Bake at 350F for 12-14 minutes or until golden brown. Cool on wire racks.
