We start with a fresh orange. First, zest the orange and place the zest into a medium saucepan.

Juice the orange too. Pour the juice through a strainer so that you don’t get any seeds in the saucepan.

To the saucepan add fresh or frozen cranberries, sugar, cornstarch, and salt.

Bring to a boil over medium-high heat. Cook and stir until thickened.

Remove from heat and stir in butter. Allow to cool completely, you may want to cool it over an ice bath.

Meanwhile, place cool whip, room temperature cream cheese, and powdered sugar in the bowl of an  electric mixer.

Beat together until well combined and smooth.

Place the cream cheese mixture into the large graham cracker crust.

Spread the cream cheese mixture so that it forms a nice nest in the middle for the cranberry orange filling.

Place the cooled filling into the nest.

Ingredients
  • For the Cranberry Orange Filling:
  • 1 large fresh orange
  • 2c. fresh or frozen cranberries
  • ½c. sugar
  • 2T. cornstarch
  • Pinch of salt
  • 1T. butter
  • For the Cream Cheese part:
  • 8oz. cool whip
  • 8oz. cream cheese, room temperature
  • 2c. powdered sugar
  • 1 large graham cracker crust
Method
  1. For the Cranberry Orange Filling:
  2. Zest the orange and place the zest into a medium saucepan. Juice the orange and strain it into the saucepan.
  3. Add the cranberries, sugar, cornstarch, and salt.
  4. Heat and stir until the mixture thickens.
  5. Remove from heat and stir in butter until melted. Cool completely.
  6. While the filling cools place the cool whip, cream cheese, and powdered sugar into the bowl of an electric mixer.
  7. Beat until the mixture is smooth.
  8. Spread the cream cheese part into the graham cracker crust. Make a nest in the middle for the cranberry orange filling.
  9. Place the filling into the center of the pie, where the nest is.
  10. Serve immediately, or refrigerate until ready to use.
