Brownie Cookie Dough Pinwheel

Hi,

Okay so this recipe is amazing!!! It is so super good, the brownie is so fudgy that it is almost like the whole pinwheel is made of cookie dough. It’s amazing.  So without further ado, lets get to baking!

First, prepare the pan! Just line a jelly roll pan with parchment paper, so that the parchment is a bit bigger then the pan. Butter it all up good, the sides, the parchment, all of it.

Next the brownies starting with eggs, melted butter, and half & half. Just mix them all together in a bowl.

Then add the brownie mix.

Stir it up good.

Much better. Pour the resulting batter into your prepared pan.

Bake it all up.

While the brownies are cooling you can make the cookie dough. Cream the butter, vanilla, and sugars together.

Add the flour and half & half, mix it up well. Last add the mini chocolate chips, stir them in well.

Now, to put all the deliciousness together. Remove the brownies from their pan, with the aid of the parchment paper.

Dollop on the cookie dough and start to spread it with your icing spatula.

Spread the cookie dough over the brownies, not all the way to the sides, about a 1/2 inch away from the sides of the brownies.

Using the parchment paper start to roll the brownie up, rolling the long side of the brownie.

Try to keep it pretty tight. Another nice thing about these brownies being so fudgy is that if they crack a bit you can just press them back together. Note: during the rolling up stage the ends might try and fall off, that is okay you’ll be cutting them off anyway.

Next, turn the parchment over and roll the brownie log in it. Place this on some cling wrap.

Roll it all together and place it in the refrigerator for about an hour.

Now you can cut it! Cut off the ends (if they didn’t already fall off) and discard them, or eat them! Then cut the rest into about 1/2 inch pieces.

I used a bench scraper to cut these pinwheels and it worked super good.

Brownie Cookie Dough Pinwheel

Brownie Cookie Dough Pinwheels: A rich fudgy brownie with delightful cookie dough! Possible the best brownie ever!
Ingredients
  • For the Brownies:
  • ¼c. half & half
  • ⅔c. butter, melted
  • 2 eggs
  • 1 (18.3oz) Fudge Brownie Mix
  • For the Cookie Dough:
  • 1 sitck butter, softened
  • ⅓c. sugar
  • ⅓c. brown sugar, packed
  • 1t. vanilla extract
  • ⅓c. flour
  • 1T. half & half
  • ⅓c. mini semi-sweet chocolate chips
Method
  1. For the Brownies:
  2. Preheat oven to 350F. Line a jelly roll pan with parchment paper so that there is extra parchment sticking out from the sides. Thoroughly butter the sides of the pan and the parchment paper in the pan.
  3. Mix the eggs, butter, and half & half in a bowl until well combined.
  4. Add the brownie mix and mix well.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake at 350F for 15-20 minutes or until toothpick inserted 2 inched for the edge comes out clean.
  7. Cool completely on a wire rack.
  8. Remove from pan and spread with Cookie Dough (recipe below). Spread to within about a ½ inch of the edge of the brownie.
  9. Roll the long side of the brownie up with the aid of the parchment paper to form a brownie log.
  10. Roll the brownie log tightly in parchment and then in cling wrap and refrigerate for about 1 hour.
  11. When the brownie log is thoroughly chilled cut it into ½ inch pierces using a
  12. bench scraper
  13. Store leftovers in the refrigerator or freeze for later use.
  14. For the Cookie Dough:
  15. Cream together butter, sugars, and vanilla.
  16. Add the flour and half & half. Mix well.
  17. Stir in the chocolate chips.
