Hey there,

I’m really excited to share these Brown Sugar Frosted Banana Bars with you today. The base is almost like a dense cake. The brown sugar frosting… oh, the frosting… is rich and thick and definitely EPIC sweet! The banana in this recipe is not overpowering, as bananas can sometimes be. The brown sugar frosting is my favorite part though – I love me some brown sugar!

First, preheat your oven to 350F and grease a 9×13-inch cake pan.

Next, in the bowl of an electric mixer place, 2 very ripe bananas (peeled), sugar, brown sugar, soft butter, vanilla, and eggs.

Mix well, then add flour, baking powder, and salt.

Mix it all together well. It will ba a bit lumpy because of the banana but that is okay.

Pour the batter into your greased pan and bake at 350F for 20-23 minutes or until a toothpick inserted in the center comes out clean.

While your bars cool you can go about making the brown sugar frosting. First, melt one stick of butter in a saucepan.

Add the brown sugar.

Cook and stir for 2 minutes. Add the half & half.

Bring to a rolling boil stirring constantly.

Remove from the heat and stir in the vanilla.

Stir in the powdered sugar 1 cup at a time. Just use a spatula to do the stirring, not a whisk.

Brown Sugar Frosted Banana Bars

Pour the frosting over the banana bars and spread it out with a spatula.

Brown Sugar Frosted Banana Bars: A cakey banana bar topped with a thick, rich brown sugar frosting. It's great as a dessert or a snack.
Ingredients
  • For the Banana Bars:
  • 2 very ripe bananas, peeled
  • 1c. sugar
  • ½c. brown sugar, packed
  • 1 stick butter, soft
  • 1t. pure vanilla extract
  • 2 eggs
  • 2c. flour
  • 1t. baking powder
  • ½t. salt
  • For the Brown Sugar Frosting:
  • 1 stick butter, softened
  • ⅔c. brown sugar, packed
  • 3T. half&half
  • 2c. powdered sugar
  • 1t. pure vanilla extract
Method
  1. Preheat oven to 350F and grease a 9x13 inch cake pan.
  2. In the bowl of an electric mixer combine bananas, sugar, ½c. brown sugar, 1 stick butter, 1t. vanilla, and eggs.
  3. Stir in the flour, baking powder, and salt. Beat well.
  4. Pour batter into prepared pan and bake at 350F for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool.
  5. While the banana bars cool make the brown sugar frosting. In a saucepan melt 1 stick of butter.
  6. Stir in the ⅔c. brown sugar. Cook and stir for 2 minutes.
  7. Stir int he half&half. Bring to a rolling boil, stirring constantly.
  8. Remove from heat and use a spatula to stir in 1t. vanilla, then stir in the powdered sugar 1c. at a time. Stir until well combined.
  9. Pour over banana bars and spread smooth with a spatula. Cool, slice, and serve.
