Brown Sugar Apple Scones

Hi,

Scones, sometimes you get one or worse make one and it is super dry, you wonder “why in the world did I waste my time?” These Brown Sugar Apple Scones are not those scones, they are moist and tender with the perfect balance of apple, cinnamon, nutmeg, and brown sugar. These scones do not disappoint. They are perfect for a cool fall morning.

The scones start, as all apple scones should, with fresh apple.

Core the apples.

Peel the apples too.

Then cut the apples into small chunks.

Place the apple chunks in a small sauce pan with brown sugar, salt, cinnamon, and nutmeg.

Stir, and cook over medium heat until the apples are tender.

Strain the apples over a small dish.

Place the apples in one container, set aside. To the container with the juice add a small dab of butter, stir to melt, set aside.

In a large bowl combine the flour, more brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

Cut in some butter, I like to cut my butter up a bit before I go after it with a pastry cutter.

Once the dough resembles course crumbs, add the buttermilk and vanilla.

Stir well then add the cooked apples (not the juice, just the apples).

Stir in the apples, at this point I started to knead/stir it with my hand.

Place the dough on an ungreased cookie sheet and press it out into a 7 inch circle with your hands.

Sprinkle the top with course sugar.

Cut the dough into 8 wedges.

Bake at 425F for 15-20 minutes or until lightly browned.

Drizzle with the reserved juice just before serving.

Brown Sugar Apple Scones: Moist and tender scones with excellent apple flavor. The perfect balance of brown sugar, cinnamon, nutmeg, and apple.
Ingredients
  • For the Apples:
  • 2c. peeled, cored, and chopped apples
  • ½c. brown sugar, packed
  • ⅛t. salt
  • ½t. ground cinnamon
  • ¼t. ground nutmeg
  • ½T. butter
  • For the Scone:
  • 1⅔c. flour
  • ¼c. brown sugar, packed
  • 1¼t. baking powder
  • ¼t. baking soda
  • ¼t. salt
  • ½t. ground cinnamon
  • ¼t. ground nutmeg
  • ⅓c. butter, cold
  • ⅓c. buttermilk
  • ½t. pure vanilla extract
  • Course sugar to sprinkle
Method
  1. For the Apples:
  2. Preheat oven to 425F
  3. Combine all the ingredients for the Apples, accept the butter, in a small sauce pan.
  4. Heat and stir until the apples are tender. Strain the apples placing the juice in one container and the apples in another. Add the butter to the juice and stir to combine, set both apples and juice aside.
  5. In a large bowl combine the dry ingredients for the scones. Cut in the ⅓c. of butter until the mixture resembles course crumbs.
  6. Stir in the buttermilk and vanilla. Stir in the apples (not the juice), until well incorporated.
  7. Press the dough into a 7 inch circle on an ungreased cookies sheet. Sprinkle with course sugar.
  8. Cut dough into 8 wedges. Bake at 425F for 15-20 minutes or until lightly browned.
  9. Drizzle with the reserved juice right before serving.
