Blackberry Paradise with Brown Sugar

I’m so excited to share today’s recipe with you. This is differently one that you will want in your recipe box. We shared this dessert with some dear friends of ours and I asked what I should call it. Ken said, “Paradise,” and so that’s what I’m gonna call it: Blackberry Paradise. So what is this Blackberry Paradise anyway? Well, you take an angel food cake, crumble it up into pieces, top it with brown sugar pudding, then blackberry sauce, and then whipped cream! I know… paradise.

Step one: either bake an angel food cake or use a purchased one. I recommend Brown Sugar Spice Angel Food Cake, just make it without the spices and you have a brown sugar angel food cake.

Now just tear up the cake and place it in your container. You can either use a 9×13-inch  pan or make it in individual bowls. Set aside.

Now let’s make the brown sugar pudding. In a saucepan whisk together the brown sugar and cornstarch. in the half & half.

Bring the mixture to a boil and cook it, stirring often until it is well thickened.

Remove the saucepan from the heat and stir in the vanilla and butter.

Pour this over the torn up cake.

Next, the blackberry sauce. In a saucepan combine blackberries, brown sugar, cornstarch, and salt.

Heat and stir until the mixture thickens.

Remove the saucepan from the heat and stir in the butter.

Allow the mixture to cool for a bit before stirring in fresh blackberries.

Spread this mixture over the pudding. Allow to cool completely.

Meanwhile, whip together heavy cream and powdered sugar until stiff peaks form.

Once the blackberry sauce and pudding are completely cooled spread the whipped cream over the top.

I know that you all are going to absolutely LOVE this dessert. For best results try to use the freshest, tastiest berries you can find. The tastier the blackberries the tastier the resulting dessert. Everyone who tries this dessert is going to want the recipe, so be prepared!

Blackberry Paradise: Angel food cake smothered in brown sugar pudding, covered in blackberry sauce, and topped with a thick layer of whipped cream. Of course, it's Paradise!!!
  • one angel food cake (purchased or homemade) cut into cubes
  • For the Brown Sugar Pudding:
  • 1½c. brown sugar, packed
  • 4½T. cornstarch
  • 3¾c. half & half
  • 1½t. pure vanilla extract
  • 3T. butter
  • For the Blackberry Sauce:
  • 2c. blackberries
  • ½c. brown sugar, packed
  • 2T. cornstarch
  • ¼t. salt
  • 1T. butter
  • 2c. fresh blackberries
  • For the Whipped Cream:
  • 2c. heavy cream
  • ½c. powdered sugar
  1. Place the torn pieces of angel food cake in a container either in individual containers or in a 9x13-inch pan.
  2. For the Brown Sugar Pudding;
  3. In a medium saucepan whisk together 1½c. brown sugar and 4½T. cornstarch.
  4. Whisk in the half & half.
  5. Heat and whisk until the mixture thickens.
  6. Remove the saucepan from the heat and stir in 1½t. vanilla and 3T. butter.
  7. Pour the pudding over the cake cubes. Set aside.
  8. For the Blackberry Sauce:
  9. In a medium saucepan combine 2c. blackberries, ½c. brown sugar, 2T. cornstarch, and salt.
  10. Heat and stir until thickened. Remove the saucepan from the heat and stir in 1T. butter. Cool.
  11. Once cooled stir in 2c. fresh blackberries. Spread this over the pudding. Cool completely.
  12. For the Whipped Cream:
  13. Whip together the heavy cream and powdered sugar until stiff peaks form.
  14. Spread the whipped cream over the fully cooled blackberry sauce.
  15. Refrigerate until ready to serve.
