Blackberry Brown Sugar Shortcake

We have likely all had strawberry shortcake, and it is delicious, but what about other berries? They must feel so left out! Well, the blackberry doesn’t need to feel left out anymore! This Blackberry Brown Sugar Shortcake will have you wondering “why haven’t I had this before?” The biscuits are sweetened with brown sugar, the blackberries are fresh and succulent, and the whipped cream is pure brown sugar fluffiness. So, are you ready to go crazy and try a different kind of shortcake?

First, we will make the brown sugar biscuits. In a large bowl place Bisquick original, melted butter, buttermilk, and brown sugar.

Stir together well. You might have to get your hands in there to get everything fully incorporated. Press the dough out onto your counter top with your hands.

Cut the dough into medium sized circles about 2-inch.

Place the biscuits on a baking sheet.

Bake at 425F for 10-15 minutes or until light golden brown. Allow to cool.

While the biscuits cool you can make the blackberry sauce. In a bowl place half of the fresh, washed blackberries and brown sugar.

Use a potato masher or round cutter with a handle to chop the berries and brown sugar together.

Add the other half of the blackberries and stir well.

Next up is the brown sugar whipped cream! In a large bowl place heavy cream, brown sugar, and vanilla.

Whip together well, until stiff peaks form.

Now it’s time to assemble! First, split a biscuit in half placing one-half on your serving plate or bowl.

Next, add some of the blackberry sauce. That way the bottom biscuit will get all soggy with blackberry yumminess!

Now a dollop of whipped cream.

Then the top half of the biscuit. You could end it right there.

I mean look how great and tempting it is.

Or you could take it to the next level and add another layer of whipped cream and berry sauce! Serve this dessert soon after it is assembled.

Blackberry Brown Sugar Shortcake: brown sugar biscuits and whipped cream with a delightful fresh blackberry sauce. Such a wonderful summer dessert!
  • For the Brown Sugar Biscuit:
  • 1½c. Original Bisquick
  • 3T. butter, melted
  • ⅓c. buttermilk
  • 3T. brown sugar, packed
  • For the Blackberry Sauce:
  • 2 clamshells of fresh blackberries, rinsed and sorted
  • ¼c. brown sugar, packed
  • For the Brown Sugar Whipped Cream:
  • 1c. heavy cream
  • 3T. brown sugar, packed
  • ⅛t. pure vanilla extract
  1. For the Brown Sugar Biscuits:
  2. Preheat oven to 425F.
  3. In a large bowl stir together all biscuit ingredients.
  4. Press the dough out with your hand into an even layer about 1¼-1½ inches thick.
  5. Use a round cutter about 2-inches across to cut the dough.
  6. Place the biscuits on an ungreased cookie sheet and bake at 425F for 10-15 minutes or until golden brown.
  7. For the Blackberry Sauce:
  8. Place half of the blackberries in a bowl with the ¼c. brown sugar, crush the berries and the brown sugar together.
  9. Stir in the remaining fresh berries.
  10. For the Brown Sugar Whipped Cream:
  11. In a large bowl, whip together heavy cream, 3T. brown sugar, and vanilla.
  12. Whip to stiff peaks.
  13. Assemble:
  14. Split a biscuit in half. Place half of the biscuit on your serving dish.
  15. Spoon on some blackberry sauce, then a dollop of whipped cream, then top that with the other half of the biscuit.
  16. If desired, top that with another dollop of whipped cream and more blackberry sauce.
